Kids can learn the mysteries of one of the greatest Italian dishes of all time. Arborio rice becomes naturally creamy as it cooks—and a little butter and sharp cheddar definitely help things along! Green peas and crisped bacon make it extra tempting.

  • 180g Baby greens (lettuce mix, baby spinach, kale or arugula)
  • 320g Arborio rice
  • 30ml Vegetable demi-glace
  • 300g Green peas
  • 30g Grated aged cheddar

Preparation

Mise en place

  • In a medium pot, combine the demi-glace, 3 ½ cups water and S&P; bring to a boil.

  • Mince the garlic.

  • Roughly chop the bacon.

Cook the bacon

  • In a large, high-sided pan, heat a drizzle of oil on medium.

  • Add the bacon* and cook, stirring occasionally, 4 to 5 min., until lightly browned.

  • Transfer ½ the bacon to a paper towel-lined plate, leaving the remaining bacon and drippings in the pan. Reserve the pan.

Start the risotto

  • In the same pan, heat the bacon and drippings on medium-high.

  • Add the garlic and sauté, 1 to 2 min., until fragrant.

  • Add the rice and sauté, 30 sec. to 1 min., until coated.

  • Add the demi-glace mixture; bring to a boil.

  • Reduce to a simmer and cook, stirring occasionally, 16 to 20 min., until most of the liquid has been absorbed and the rice is al dente.

  • If the liquid dries up before the risotto is al dente, add ¼ cup water at a time.

Finish the risotto

  • To the pan, add the spinach, peas and ¼ cup water. Cook, stirring often, 2 to 3 min., until the spinach has wilted.

  • Off the heat, add 2 tbsp butter and S&P; stir well.

Plate your dish

  • Divide the risotto between your bowls.

  • Garnish with the cheese and remaining bacon. Bon appétit!
