Beef Meatballs with Caramelized Onion
Buttery Mashed Potatoes & String Beans
They’ll be comin’ round the meatballs when they come! Few kids can resist the sight of these tasty browned spheres, fashioned from ground beef, garlic and pepper-flecked seasonings, and simmered to fork-tender. Luxe up each hefty serving with buttery mashed potatoes and crisp roasted string beans. With a yummy bonus sauce of caramelized onion—thinly sliced and cooked down alongside the meatballs, with a touch of demi-glace—they’ll be coming back for more.

Preparation
Make the mash
Preheat the oven to 450°F. Bring a medium pot of salted water to a boil. Peel and medium-dice the potatoes. Add to the pot of boiling water and boil, 14 to 16 min., until very tender. Reserving ½ cup cooking water, drain and return to the pot. Off the heat, add 2 tbsp butter. Mash, gradually adding the reserved cooking water until you achieve your desired consistency; season with S&P. Keep warm.
Mise en place
Meanwhile, remove the stem ends of the string beans. Peel and thinly slice the onion into rounds. Mince the garlic.
Prepare the meatballs
In a large bowl, combine the beef, garlic, ⅔ of the spices and S&P. Form into 16 meatballs about the size of a golf ball.
Cook the meatballs & make the caramelized onion
In a large pan, heat a drizzle of oil on medium-high. Add the meatballs and onion. Cook, partially covered, turning occasionally, 6 to 8 min., until partially cooked. Add the demi-glace and ½ cup water. Cook, stirring occasionally, 3 to 4 min., until the meatballs* are cooked though and the onion is caramelized.
Roast the string beans
Meanwhile, on a lined sheet pan, toss the string beans with a drizzle of oil, the remaining spices and S&P. Roast, 5 to 8 min., until crisp-tender.
Plate your dish
Divide the mash and string beans between your plates. Top the mash with the meatballs and caramelized onion. Bon appétit!
*Health Canada recommends cooking ground beef to a minimum internal temperature of 71°C.
