Cherry Tomato & Mozzarella Pizzettas
with Curly Leaf Salad
It doesn’t get any easier or faster than these little pizzas. The kids can help top each naan with sweet cherry tomatoes and cheese, and then dab on green pesto for an Italian flag finale. All the meal needs is more veg, in the form of a side salad.

- 1 Head of curly leaf lettuce
- 60ml Basil pesto
- 280g Cherry tomatoes
- 45ml Cold-pressed Italian vinaigrette
- 200ml Tomato sauce
- 120g Grated mozzarella
- 4 Naan

Parchment paper
Salt & pepper (S&P)

Preparation

Prepare the pizzas
- Preheat the oven to 450°F.
- Halve the tomatoes.
- Arrange the naan on a lined sheet pan.
- Spread with the tomato sauce. Top with the cheese, ½ the tomatoes and a drizzle of oil.

Bake the pizzas
- Bake the pizzas, 5 to 7 min., until the cheese has melted and the tomatoes have softened.
- Switch the oven to broil, 2 to 3 min., until beginning to brown.
- Transfer to a cutting board and drizzle with the pesto. Cut into wedges.

Make the salad
- Meanwhile, roughly chop the lettuce.
- In a large bowl, combine the lettuce, vinaigrette and remaining tomatoes.

Plate your dish
- Divide the pizzas and salad between your plates. Bon appétit!
