Creamy Leek Cheese Tortellini
with Sesame-Dressed Beet & Apple Salad
Who’s getting saucy this week? Our fresh tortellini, bursting with cheese, are always up for the challenge. These tender pasta pockets never say no to butter and cream—and no one would blame them. In this case, the addition of sliced leeks ups the elegance. A luxurious main calls for something sharp on the side, so throw together a lively salad with strips of beets and crisp apple nestled in baby greens.

- 120g Baby greens (lettuce mix, baby spinach, kale or arugula)
- 75g Sliced leeks
- 1 Apple
- 60ml Sesame Sunshine vinaigrette
- 350g Fresh three-cheese tortellini (contains lipase)
- 60ml Heavy cream
- 9g Zesty Herbs spices (garlic, dehydrated carrots, red bell pepper, onion, chives, salt, spices, mustard, sugar, sunflower oil, lemon oil)

Preparation
Boil the pasta
Bring a medium pot of salted water to a boil. Add the pasta; stir gently to separate. Boil, stirring occasionally, 4 to 6 min., until al dente. Reserving ½ cup cooking water (double for 4 portions), drain and toss with a drizzle of oil to prevent sticking.
Make the sauce
Meanwhile, in a large pan, heat 2 tbsp butter (double for 4 portions) on medium-high. Add the leeks and sauté, 2 to 3 min., until tender; season with the spices and S&P. Add the cream and ¼ cup water (double for 4 portions). Cook, stirring frequently, 1 to 2 min., until combined.
Make the salad
Meanwhile, halve, core and thinly slice the apple. In a large bowl, combine the baby greens, apple, beets, vinaigrette and S&P.
Combine the pasta
To the pan of sauce, add the pasta. Cook, stirring frequently, 1 to 2 min., until combined. If the sauce seems dry, gradually add the reserved cooking water until you achieve your desired consistency.
Plate your dish
Divide the pasta between your bowls. Serve the salad on the side. Bon appétit!
