Feta-Stuffed Pork Mini Meatloaves
Roasted Zucchini, Wilted Greens & Sun-Dried Tomatoes
Keto goes cute-oh with these individualized meatloaves. They may be mini in size but they’re big on protein, once you prepare each plentiful portion with a garlicky mix of ground pork and creamy, salty feta cheese. Set them out in browned slices over a medley of veggies, featuring loads of roasted zucchini along with wilted leafy greens melting into sautéed sun-dried tomatoes for residual sweetness. Top it all off with a taste of tzatziki.

- 120g Baby greens (baby spinach or kale)
- 2 Green zucchini
- 30g Sliced sun-dried tomatoes
- 60g Garlic-cucumber yogurt (tzatziki)
- 60g Feta
- 7g Paprika & Oregano spices (garlic, paprika, beef bouillon, salt, onion, oregano, black pepper, sunflower oil, thyme, parsley, cinnamon, nutmeg)

Preparation

Prepare & roast the meatloaves
Preheat the oven to 450°F. In a large bowl, combine the pork, cheese, ½ the garlic and ½ the spices. Form into 2 small loaves* (double for 4 portions). Arrange on a lined sheet pan and roast, 15 to 18 min., until cooked through.

Cook the spinach & tomatoes
Meanwhile, in a large pan, heat a drizzle of oil on medium. Add the remaining garlic and sauté, 30 sec. to 1 min., until fragrant. Add the spinach and tomatoes. Cook, partially covered, stirring occasionally, 2 to 3 min., until wilted and warmed through; season with S&P.

Roast the zucchini
Meanwhile, halve the zucchini lengthwise; cut crosswise into ½ inch pieces on an angle. On a second lined sheet pan, toss with a drizzle of oil, the remaining spices and S&P. Roast, flipping halfway, 7 to 9 min., until browned and tender.

Plate your dish
Divide the zucchini, spinach and tomatoes between your plates. Top with the meatloaves (slice beforehand if desired). Serve the tzatziki on the side. Bon appétit!
