In 25 minutes, the whole family will be slurping with satisfaction. Rice noodles go to great lengths to make everyone happy. Enjoy untangling them from a Thai-flavoured medley of lean ground beef and two of the most loveable veggies.

  • 2 Green zucchini
  • 2 Garlic cloves
  • 90ml Ponzu lime sauce
  • 300g Edamame (or green peas)
  • 225g Rice noodles
  • 90ml Sweet soy sauce
  • 12g Mellow Sesame spices (brown sugar, sea salt, white sesame, garlic, canola oil, ginger, paprika flavour, black pepper, cellulose)

Preparation

Boil the noodles

  • Bring a medium pot of salted water to a boil.

  • Off the heat, add the noodles; stir gently to separate.

  • Cover and let sit for 5 to 7 min. until tender.

  • Drain, rinse under cold water and toss with a drizzle of oil to prevent sticking.

Start the beef

  • Meanwhile, in a large, high-sided pan, heat a drizzle of oil on medium-high.

  • Add the beef; season with the spices.

  • Cook, breaking up the meat, 2 to 3 min., until beginning to brown.

Mise en place

  • Meanwhile, quarter the zucchini lengthwise; cut crosswise into ½ inch pieces.

  • Roughly chop the garlic.

Finish the beef & combine the noodles

  • To the pan, add the garlic and cook, stirring often, 30 sec. to 1 min., until fragrant.

  • Add the zucchini, edamame and 2 tbsp water. Cook, partially covered, 3 to 4 min., until the vegetables are tender and the beef* is cooked through.

  • Add the noodlessoy sauceponzu and S&P. Cook, stirring often, 2 to 3 min., until combined.

  • Divide the noodles between your bowls. Bon appétit!
