Ground Beef Shepherd's Pie
with Butternut Squash, Peas & Aged Cheddar
Level up a family classic with a few extra touches. You’ll be working aged white cheddar into fluffy mashed potatoes for the right touch of tanginess, jamming butternut squash and peas into Mediterranean-spiced ground beef filling, and baking this homey winter dish for a golden finish.

- 1 Onion (or shallot)
- 150g Green peas
- 12g Beef demi-glace
- 90g Grated aged cheddar
- 20g Mediterranean Shores spices (paprika, garlic, salt, roasted garlic, black pepper, sun-dried tomato, tomato, red bell pepper, oregano, mustard, rosemary)

Preparation
Make the mash
- Preheat the oven to 450°F. Bring a medium pot of salted water to a boil.
- Peel and medium-dice the potatoes.
- Add to the pot of boiling water and boil, 14 to 16 min., until very tender.
- Reserving 1 cup cooking water, drain and return to the pot.
- Off the heat, add 4 tbsp butter.
- Mash, gradually adding the reserved cooking water until you achieve your desired consistency.
- Add the cheese and S&P; stir well.
Mise en place
- Meanwhile, halve, peel and small-dice the onion.
Start the filling
- In a large pan, heat a drizzle of oil on medium-high.
- Add the onion and sauté, 1 to 2 min., until fragrant.
- Add the beef; season with the spices and S&P.
- Cook, breaking up the meat, 3 to 5 min., until partially cooked.
Finish the filling
- To the pan of beef, add the squash.
- Cook, stirring occasionally, 2 to 3 min., until beginning to soften.
- Add the peas, demi-glace and ½ cup water.
- Cook, stirring occasionally, 2 to 3 min., until slightly reduced and the beef* is cooked through.
Assemble & bake the shepherd’s pie
- Transfer the filling to a large baking dish.
- Spread with the mash.
- Place on a sheet pan and bake, 12 to 14 min., until lightly browned on the edges.
- Let stand for 5 min. before serving.
Plate your dish
- Divide the shepherd’s pie between your plates. Bon appétit!
*Health Canada recommends cooking ground beef to a minimum internal temperature of 71°C.
