Ground Pork Tacos with Tamarind Mayo
Feta-Tomato Salsa & Curly Leaf Lettuce
Count your blessings before you even begin. That’s because this tantalizing taco night needs only one pan from your kitchen and 10 minutes of your time. Ground pork picks up notes of ancho pepper and sesame seeds as it browns. Tamarind paste turns mayo into a real tongue-teaser for lining each warm tortilla, while tomato salsa loaded with salty feta cheese sparkles over top. Lightly dressed curly leaf lettuce salad ensures a crisp finish.

- 15ml Minced garlic
- 2 Tomatoes
- 1 Head of curly leaf lettuce
- 60ml Mayonnaise
- 15ml Tamarind paste
- 30g Feta
- 6 Wheat flour tortillas
- 30ml Apple cider vinegar
- 6g America Latina spices (spices, garlic, sea salt, onion, dried tomatoes, ancho chili pepper, red bell pepper, green bell pepper, white sesame seeds, sunflower oil)

Preparation

Cook the pork
In a medium pan, heat a generous drizzle of oil on medium-high. Add the garlic and sauté, 30 sec. to 1 min., until fragrant. Add the pork*; season with ¾ of the spices and S&P. Cook, breaking up the meat, 4 to 6 min., until browned and cooked through.

Mise en place
Meanwhile, thinly slice the lettuce crosswise. Medium-dice the tomatoes.

Make the salsa & salad
In a medium bowl, combine the tomatoes, cheese, ½ the vinegar, a drizzle of oil, the remaining spices and S&P. In a second medium bowl, combine the lettuce, remaining vinegar, 2 tbsp oil (double for 4 portions) and S&P.

Make the tamarind mayo
In a small bowl, combine the mayo, tamarind and S&P.

Warm the tortillas
Wrap the tortillas in a slightly dampened paper towel. On a plate, microwave, in 10 sec. increments, until warm.

Plate your dish
Divide the tortillas between your plates. Spread with the tamarind mayo. Top with the pork, a spoonful of the salad and the salsa. Serve the remaining salad on the side. Bon appétit!
