Preparation
Mise en place
- Preheat the air fryer to 400°F. Lightly oil the basket.
- Halve the Brussels sprouts lengthwise (quarter if large).
- Core the apple; cut into 12 wedges.
Fry the Brussels sprouts
- In a medium bowl, combine the Brussels sprouts, a drizzle of oil, ⅓ of the spices and S&P.
- Add to the air fryer and fry, 6 to 8 min., until tender.
- Return to the bowl.
Make the 'baked' beans
- Meanwhile, drain and rinse the kidney beans.
- Heat a medium, dry pot on medium.
- Add the kidney beans, ketchup, demi-glace, ¼ cup water (double for 4 portions) and S&P; bring to a boil.
- Reduce to a simmer and cook, stirring occasionally, 3 to 5 min., until combined and warmed through.
- If the beans seem dry, gradually add 2 to 3 tbsp water (double for 4 portions) at a time until you achieve your desired consistency.
Fry the pork & apple
- Pat the pork dry. In a second medium bowl, toss with a drizzle of oil, the remaining spices and S&P.
- In a small bowl, combine the maple syrup, mustard and ½ the vinegar (discard remaining).
- Place the pork* and apple in the air fryer and fry, 7 to 8 min., until browned and cooked through.
- In the last 2 min., brush the pork with the maple-vinegar mixture.
Plate your dish
- Divide the 'baked' beans between your plates.
- Top with the Brussels sprouts, pork and apple. Bon appétit!
*Health Canada recommends cooking pork to a minimum internal temperature of 71°C.
