This burger night fits the family wish list. Big meaty ground beef patties sizzled on the BBQ, with melted mozzarella and grilled onion on top. Thick potato wedges roasted to golden-brown, with tangy spiced mayo for dipping. And a green salad on the side.

Preparation

Roast the potatoes
Preheat the oven to 450°F. Heat the BBQ on high, making sure to oil the grill first. Cut the potatoes lengthwise into ½ inch wedges. On a lined sheet pan, toss with a drizzle of oil, ½ the spices and S&P. Roast, flipping halfway, 20 to 25 min., until browned and tender.

Meanwhile, peel and cut the onion into ½ inch rounds. In a medium bowl, combine the onion, a drizzle of oil and S&P. Reserving 4 of the largest outer leaves, tear the lettuce. In a small bowl, combine the mayo, ½ the remaining spices and S&P.

Prepare the patties
In a large bowl, combine the beef, remaining spices and S&P. Form into 4 patties.

Grill the patties & onion
Add the patties* to the BBQ and grill, 3 to 5 min. per side, until cooked through. In the last min., top with the cheese. Add the onion to the BBQ and grill, turning occasionally, 4 to 6 min., until browned and tender. Transfer to a plate.

Grill the buns
Add the buns, cut-sides down, to the BBQ and grill, 1 to 2 min., until warmed through.

Make the salad & serve
In a second large bowl, combine the torn lettuce, vinegar, 2 tbsp oil and S&P. Divide the potatoes and bun bottoms between your plates. Top each bun bottom with the spiced mayo, a patty, the onion, reserved lettuce leaves and a bun top. Serve the salad on the side. Bon appétit!
