Pork & Cheese Smash Burger Tacos
with Cornichon Mayo, Lettuce & Tomato
Satisfaction comes in many ways, shapes and forms, like our take on smash burger tacos! It doesn’t get more satisfying than the meaty cheesy fun of a cheeseburger. Assemble all those cozy components on tortillas to turn them into these diner-style tacos. Ground pork seasoned with our Meat & Greet blend gets a topping of aged white cheddar, followed by slivered lettuce and juicy tomatoes. The secret is in the sauce (and shhhh, it’s mayo, ketchup and chopped gherkin cornichons).

- 1 Tomato
- 1 Head of lettuce
- 60ml Mayonnaise
- 15ml Apple cider vinegar
- 15ml Ketchup
- 16g Cornichons
- 60g Grated aged cheddar
- 6 Wheat flour tortillas
- 12g Meat & Greet spices (garlic, salt, onion, paprika, sunflower oil, oregano, thyme)

Preparation

Mise en place
Thinly slice ⅓ of the lettuce and roughly chop the remaining ⅔. Medium-dice the tomato. Thinly slice the cornichons crosswise. In a small bowl, make the sauce by combining the mayo, cornichons, ketchup, 1 tsp water (double for 4 portions), ⅓ of the spices and S&P.

Prepare the smash burger tacos
In a large bowl, combine the pork, remaining spices and S&P. Place the tortillas on a dry work surface. Spread evenly with the pork; season with S&P.

Cook the smash burger tacos
In a large pan (use 2 pans for speed), heat a drizzle of oil on medium. Working in batches, add the tacos, meat-sides down, and cook, 1 to 2 min., until the pork* is cooked through. Flip and top with the cheese. Cook, 30 sec. to 1 min., until the cheese has melted.

Make the salad
Meanwhile, in a second large bowl, combine the vinegar (start with ½), a drizzle of oil and S&P. Add the chopped lettuce and ½ the tomato; toss well.

Plate your dish
Divide the smash burger tacos between your plates. Top with the sliced lettuce, remaining tomato, a spoonful of the sauce and S&P. Serve the salad and remaining sauce on the side. Bon appétit!
