Curly Leaf Salad
Power up on proteins! Add bacon to your meal with our Protein Boost option. The operating principles behind this pasta dinner are speediness, freshness and tanginess. The sauce requires throwing cherry tomatoes into a pan with butter and balsamic, the pasta requires less than five minutes to cook, and the meal requires the simplest side salad for success.

- 280g Cherry tomatoes
- 1 Head of curly leaf lettuce
- 30ml Balsamic vinegar
- 225g Fresh torchiette
- 7.5g Bell Pepper & Olive spices (garlic, red bell pepper, dried black olives, basil, oregano, salt, parsley, lemon, sunflower oil, black pepper)
- 100g Naturally smoked bacon (raised without antibiotics by Canadian farmers)

Preparation
Boil the pasta
- Bring a medium pot of salted water to a boil.
- Add the pasta; stir gently to separate.
- Boil, 3 to 5 min., until al dente.
- Reserving¼ cup cooking water (double for 4 portions), drain and toss with a drizzle of oil to prevent sticking.
Mise en place
- Meanwhile, halve the tomatoes.
- Mince the garlic.
Start the sauce
- In a large pan, heat a drizzle of oil on medium.
- Add the garlic and ⅔ of the tomatoes. Sauté, 2 to 3 min., until beginning to soften.
- Add ½ the vinegar, 3 tbsp butter (double for 4 portions), ⅔ of the spices and S&P.
- Cook, stirring often, 1 to 2 min., until melted and combined.
Make the salad
- Meanwhile, roughly chop the lettuce.
- In a medium bowl, combine the remaining vinegar and spices, and 2 tbsp oil (double for 4 portions).
- Add the lettuce and remaining tomatoes; toss well.
Finish the sauce & combine the pasta
- To the pan of sauce, add the pasta and ½ the reserved cooking water.
- Cook, stirring often, 1 to 2 min, until combined and warmed through; season with S&P.
- If the sauce seems dry, gradually add the remaining cooking water until you achieve your desired consistency.
Plate your dish
- Divide the pasta between your bowls.
- Serve the salad on the side. Bon appétit!
