The sauce requires throwing cherry tomatoes into a pan with butter and balsamic, the pasta requires less than five minutes to cook, and the meal requires the simplest side salad for success.

Preparation

Boil the pasta

  • Bring a medium pot of salted water to a boil.

  • Add the pasta; stir gently to separate.

  • Boil, 3 to 5 min., until al dente.

  • Reserving¼ cup cooking water (double for 4 portions), drain and toss with a drizzle of oil to prevent sticking.

  • Meanwhile, halve the tomatoes.

  • Mince the garlic.

Start the sauce

  • In a large pan, heat a drizzle of oil on medium.

  • Add the garlic and ⅔ of the tomatoes. Sauté, 2 to 3 min., until beginning to soften.

  • Add ½ the vinegar, 3 tbsp butter (double for 4 portions), ⅔ of the spices and S&P.

  • Cook, stirring often, 1 to 2 min., until melted and combined.

Make the salad

  • Meanwhile, roughly chop the lettuce.

  • In a medium bowl, combine the remaining vinegar and spices, and 2 tbsp oil (double for 4 portions).

  • Add the lettuce and remaining tomatoes; toss well.

Finish the sauce & combine the pasta

  • To the pan of sauce, add the pasta and ½ the reserved cooking water.

  • Cook, stirring often, 1 to 2 min, until combined and warmed through; season with S&P.

  • If the sauce seems dry, gradually add the remaining cooking water until you achieve your desired consistency.

Plate your dish

  • Divide the pasta between your bowls.
