Protein Boost | Garlicky Spanakopita Impossible™ Beef Skillet Pizza
with Heirloom Tomato Salad

The wilted greens, garlic and feta cheese of traditional spanakopita are on show, over a layer of creamy mascarpone. Sweet heirloom tomatoes in red wine vinegar boost summer on the side.

- 120g Baby greens (baby spinach or kale)
- 3 Garlic cloves
- 30ml Red wine vinegar
- 90g Feta
- 30ml Mascarpone
- 454g Pizza dough
- 225g Heirloom tomatoes
- 9g Zesty Herbs spices (garlic, dehydrated carrots, red bell pepper, onion, chives, salt, spices, mustard, sugar, sunflower oil, lemon oil)

Preparation

Sauté the spinach
- Preheat the oven to 450°F.
- Set the dough aside to come to room temperature.
- Mince the garlic.
- In a large, oven-safe pan, heat a generous drizzle of oil on medium-high.
- Add the garlic and sauté, 30 sec. to 1 min., until fragrant.
- Add the spinach and feta. Sauté, 1 to 2 min., until wilted; season with ⅓ of the spices and S&P.
- Transfer to a strainer set over a bowl to remove any excess liquid. Wipe out and reserve the pan.

Start the pizza
- Generously brush the bottom and sides of the reserved pan with oil (use 2 pans for 4 portions).
- Lightly brush a clean work surface with oil.
- Roll or spread the dough out to the size of your pan.
- Transfer to the pan and press into place, making sure there are no thin patches.
- Drizzle with oil; season with ½ the remaining spices and S&P.
- Bake, 18 to 20 min., until cooked through.

Mise en place
- Meanwhile, small-dice the tomatoes.
- In a small bowl, combine the mascarpone, remaining spices and S&P.

Make the salad & cook the patties
- In a large bowl, combine the tomatoes, vinegar (start with ½), a drizzle of oil and S&P.
- Crumble the patties.
- In a large pan, heat a drizzle of oil on medium.
- Add the crumbled patties and cook, stirring occasionally, 3 to 5 min., until beginning to brown.

Finish the pizza
- When the dough is cooked through, remove from the oven and switch the oven to broil.
- Spread with the spiced mascarpone.
- Top with the spinach mixture and crumbled patties.
- Broil, 2 to 3 min., until beginning to brown.
- Transfer to a cutting board and cut into wedges.

Plate your dish
- Divide the pizza and salad between your plates. Bon appétit!
