Protein Swap | Orange-Almond Shrimp
with Pearl Couscous & Green Beans
If we have one ask for February, it’s a little more sunshine. An injection of fresh orange juice and orange sauce gives this air-fried shrimp supper just the boost it needs to shine brightly on the table. Adding warm, crackling almonds only makes it better.

- 200g Green beans (or string peas)
- 2 Garlic cloves
- 1 Orange
- 160g Multicoloured pearl couscous
- 25g Almonds
- 30ml Orange sauce
- 9g Lemony Dill & Marjoram spices (paprika, salt, black pepper, garlic, sugar, onion, lemon peels, dill seeds, coriander seeds, rosemary, marjoram, parsley, citric acid, canola oil, lemon powder, bay leaf, lemon oil)

You will need:

Preparation

Boil the couscous
- Preheat the air fryer to 400°F. Lightly oil the basket. Bring a medium pot of salted water to a boil.
- Add the couscous; stir gently to separate.
- Boil, 8 to 10 min., until tender.
- Drain and rinse.
- Return to the pot and toss with a drizzle of oil to prevent clumping; season with S&P.

Mise en place
- Meanwhile, remove the stem ends of the green beans.
- Juice the orange.
- Mince the garlic.

Fry the green beans
- In a medium bowl, combine the green beans, ½ the garlic, a drizzle of oil, ⅓ of the spices and S&P.
- Add to the air fryer and fry, 4 to 6 min., until tender.
- Transfer to a plate.

Make the sauce
- Meanwhile, in a small pan, heat a drizzle of oil on medium.
- Add the almonds and remaining garlic. Toast, stirring occasionally, 2 to 3 min., until lightly browned and fragrant.
- Add the orange juice, orange sauce, 1 tbsp butter (double for 4 portions) and S&P.
- Cook, stirring often, 1 to 2 min., until combined and beginning to thicken.

Fry the salmon
- Pat the salmon* dry and rub with a drizzle of oil; season with the remaining spices and S&P.
- Place in the air fryer and fry, 4 to 6 min., until browned and cooked as desired.

Plate your dish
- Divide the couscous, green beans and salmon between your plates.
- Spoon the sauce over the salmon. Bon appétit!
*Health Canada recommends cooking shellfish to a minimum internal temperature of 74°C.
