Protein Boost | Sausage, Feta & Greens Boureka Hand Pies
with Honey-Sesame Topping
Golden and sesame-studded outside. Greens and cheese snuggled inside. Bourekas are a savoury pastry treat that harks back to the Ottoman empire. Oven-baked, filled with kale and feta, and topped with honey, these pies are cozy to the core with every bite.

- 300g Canadian-raised mild Italian pork sausage meat
- 3 Garlic cloves
- ½ Bunch of kale
- 120g Baby greens (baby spinach or kale)
- 1 Shallot (or onion)
- 14g Honey
- 90g Feta
- 454g Pizza dough
- 9g Black & white sesame seeds

Preparation

Mise en place
- Preheat the oven to 450°F.
- Set the dough aside to come up to room temperature.
- Halve, peel and thinly slice the shallot.
- Mince the garlic.
- Remove the kale leaves from the stems; roughly chop the leaves.

Make the filling
- In a medium bowl, beat 1 egg (double for 4 portions) until smooth.
- In a large pan, heat a drizzle of oil on medium-high.
- Add the shallot and garlic. Sauté, 30 sec. to 1 min., until fragrant.
- Add the kale and sauté, 2 to 3 min., until wilted; season with S&P.
- Add the spinach and sauté, 1 to 2 min., until wilted.
- Transfer to the bowl of egg, stirring constantly, 1 min., until combined.
- Add the cheese; stir well and let cool.

Prepare the hand pies
- Divide the **dough **into 4 balls.
- On a lightly oiled work surface, roll or spread each ball into 5-inch rounds.
- Divide the **filling **between the rounds, leaving a 1-inch border free around the edges.
- Pull the edges of the dough over the filling and pinch to seal.
- Arrange the hand pies, seam-sides down, on a lined sheet pan drizzled with oil.

Bake the hand pies
- In a small bowl, beat 1 egg (double for 4 portions) until smooth.
- Brush the hand pies with the egg.
- Drizzle with the honey and sprinkle with the sesame seeds.
- Bake, rotating the pan halfway, 14 to 16 min., until golden brown and cooked through.

Plate your dish
- Divide the hand pies between your plates. Bon appétit!
