Power up on proteins! Add ground beef to your meal with our Protein Boost option. Sometimes it’s neat to get sloppy. This version of Sloppy Joes is packed deep with flavour from lentils, beef, sautéed garlic and a sploosh of sweet, tangy BBQ sauce. It brings thrills and spills as a generous topping for halved sweet potatoes, oven-roasted to soft and caramelized. On the side, a lemon-dressed salad of cukes and lettuce comes in to clean the palate, if not the plates.

Preparation

Roast the sweet potatoes
Preheat the oven to 450°F. Halve the sweet potatoes lengthwise. On a lined sheet pan, toss with a drizzle of oil, ⅓ of the spices and S&P. Arrange, cut-sides down, and roast, without flipping, 25 to 30 min., until softened.

Make the sloppy joe mixture
Meanwhile, drain and rinse the lentils. Mince the garlic. In a large pan, heat a drizzle of oil on medium-high. Add the garlic and sauté, 30 sec. to 1 min., until fragrant. Add the beef* and cook, breaking up the meat, 4 to 6 min., until cooked through. Add the lentils, BBQ sauce, demi-glace, 1 cup water (start with ½, double for 4 portions), the remaining spices and S&P. Cook, stirring frequently, 3 to 4 min., until slightly reduced.

Mise en place
Meanwhile, roughly chop the lettuce. Juice the lemon. Halve the cucumbers lengthwise; thinly slice crosswise on an angle. Thinly slice the scallion crosswise.

Make the salad
In a large bowl, combine the lemon juice, a drizzle of oil and S&P. Add the cucumbers, lettuce and ½ the scallion; toss well.

Plate your dish
Divide the sweet potatoes and salad between your plates. Top the sweet potatoes with the sloppy joe mixture. Garnish with the remaining scallion. Bon appétit!
