with Roasted Red Pepper & Smoky Mayo
Goodfood goes global! We’re travelling the world in search of culinary inspiration, and bringing you our best finds. Next stop: Portugal, where pork bifana is a top sandwich order. We’re making it with chicken, smoky mayo and roasted red pepper on a fluffy bun.
We will send you:
- 4 Canadian-raised chicken thighs (air chilled)
- 1 Lime
- 1 Head of lettuce
- 7g Honey
- 60ml Mayonnaise
- 1 Roasted pepper
- 2 Artisan hamburger buns
- 10g Iberian Ideas spices (paprika, smoked paprika, salt, black pepper, garlic, sugar, onion, lemon peel, dill, coriander, rosemary, marjoram, parsley, citric acid, sunflower oil, lemon flavour, chili, laurel bay leaf, lemon oil)

Preparation

Cook the chicken
- Pat the chicken dry; season with ¾ of the spices and S&P.
- In a medium pan, heat a drizzle of oil on medium-high.
- Add the chicken* and cook, partially covered, 6 to 8 min. per side, until cooked through.
- Transfer to a cutting board and let rest before slicing. Wipe out and reserve the pan.

Make the salad
- Meanwhile, roughly chop the lettuce.
- Thinly slice the roasted pepper lengthwise.
- Juice the lime.
- In a medium bowl, whisk the lime juice, honey, 1 tbsp oil (double for 4 portions) and S&P.
- Add the lettuce and roasted pepper; toss well.

Make the smoky mayo
- In a small bowl, combine the mayo and remaining spices.

Toast the buns
- In the reserved pan, heat a drizzle of oil on medium.
- Add the buns, cut-sides down, and toast, 1 to 2 min., until warmed through and beginning to brown.

Plate your dish
- Divide the bun bottoms between your plates.
- Top each bun bottom with the smoky mayo, chicken, a spoonful of the salad and a bun top.
- Serve the remaining salad on the side. Bon appétit!
