Protein Swap | Grilled Gyro Chorizo Pita
with Tzaziki & Lemony Salad
Anyone can be a hero with gyro, assembling hearty pita sandwiches with a swoop of tzatziki, a crisp radish and cabbage salad, and wonderfully herby chorizo patties from the grill. So let the kids have a hand in putting this Greek meal together.

- 500g Canadian-raised ground chorizo pork sausage meat
- 150g Shredded cabbage
- 200g Radishes
- 1 Head of curly leaf lettuce
- 1 Lemon
- 30g Panko
- 120g Option 1: Garlic-cucumber yogurt (tzatziki) Option 2: Garlic-cucumber yogurt (raita)
- 4 Artisanal pita
- 10g Weekend on Mykonos spices (parsley, oregano, dill, onion powder, garlic powder, kosher salt)

Preparation

Mise en place
- Heat the BBQ on high (or pan on medium-high), making sure to oil the grill first.
- Separate the lettuce leaves; tear the leaves.
- Thinly slice the radishes.
- Halve the lemon; juice ½ and quarter the remaining ½.

Prepare the patties
- In a large bowl, combine the beef, panko, spices, 1 egg and S&P.
- Form into 8 oval-shaped patties.

Grill the patties & pita
- Add the patties* to the BBQ (or pan) and grill, 3 to 5 min. per side, until cooked through
- Drizzle the pita lightly with oil. Add to the BBQ (or pan) and grill, 30 sec. to 1 min. per side, until lightly browned.

Make the salad
- Meanwhile, in a second large bowl, whisk the lemon juice, 2 tbsp oil and S&P.
- Add the cabbage, lettuce and radishes; toss well.

Plate your dish
- Divide the pita between your plates.
- Spread with the tzatziki.
- Top with a spoonful of the salad and the patties (tightly wrap the pita around the filling if desired).
- Garnish with the lemon wedges.
- Serve the remaining salad on the side. Bon appétit!
