Protein Upgrade | Crispy ORGANIC Chicken Kyiv
with Chive Butter & Green Beans
Crisped to golden from roasting in a coating of panko, and then drizzled with chive and garlic butter, this dish puts its own spin on a classic Kyiv. Your mouth watering yet? Add green beans and al dente orzo to the picture, and it will be!

- 6g Chives (or garlic chives)
- 2 Garlic cloves
- 400g Green beans (or string peas)
- 140g Orzo
- 60g Panko
- 15ml Dijon mustard
- 20g All-purpose flour

You will need:
Medium pot
Oil

Preparation
Prepare the chicken
- Preheat the oven to 450°F. Bring a medium pot of salted water to a boil.
- Pat the chicken dry; season with S&P.
- Place the flour in a shallow bowl; season with S&P.
- In a second shallow bowl, beat 1 egg (double for 4 portions) and the mustard until smooth; season with S&P.
- Place the panko in a third shallow bowl.
- Working one at a time, coat the chicken in the flour (shaking off any excess), then in the egg (letting any excess drip off), then in the panko (pressing to adhere).
- Arrange on a lined sheet pan.
Start the chicken
- Roast the chicken*, 13 to 15 min., until partially cooked.
Boil the orzo
- Meanwhile, add the orzo to the pot of boiling water and boil, 9 to 10 min., until just tender.
- Drain and rinse.
- Transfer to a bowl and toss with a drizzle of oil to prevent sticking.
- Reserve the pot.
Roast the green beans & finish the chicken
- Meanwhile, remove the stem ends of the green beans. In a medium bowl, toss with a drizzle of oil and S&P.
- When the chicken is partially cooked, add the green beans and roast, flipping halfway, 7 to 9 min., until the chicken* is cooked through and the green beans are tender.
Make the chive butter
- Mince the garlic.
- Thinly slice the chives.
- In the reserved pot, heat 2 tbsp butter (double for 4 portions) on medium.
- Add the garlic and sauté, 30 sec. to 1 min., until fragrant.
- Off the heat, add the chives and S&P; stir well.
Finish & serve
- To the bowl of orzo, add ½ the chive butter; stir well.
- Divide the orzo, chicken (slice beforehand if desired) and green beans between your plates.
- Drizzle the chicken with the remaining chive butter. Bon appétit!
*Health Canada recommends cooking poultry to a minimum internal temperature of 74°C.
