Protein Upgrade | Filipino ORGANIC Chicken Adobo with Peanuts
over 'Naked' Egg Rolls
Imagine an eggroll without its wrapper. Known as lumpiang hubad in the Philippines, this tasty mix of finely chopped veggies cooked on a sheet pan is a colourful base for carb-wise plates. It’s topped with another fave: sweet and saucy organic chicken adobo.

- 2 Organic chicken breasts (raised without antibiotics by Canadian farmers)
- 200g Green beans (or string peas)
- 150g Shredded cabbage
- 1 Onion (or shallot)
- 3 Garlic cloves
- 200g Multicoloured Nantes carrots
- 30ml Sweet soy sauce
- 30ml Rice vinegar
- 25g Chopped peanuts
- 30ml Vegetable demi-glace

Preparation
Mise en place
- Preheat the oven to 450°F.
- Remove the stem ends of the green beans; halve crosswise on an angle.
- Halve the carrots lengthwise; thinly slice crosswise.
- Halve, peel and thinly slice the onion.
- Roughly chop the garlic.
Roast the vegetables
- In a large bowl, combine the green beans, carrots, cabbage, onion, ⅔ of the garlic, a drizzle of oil and S&P.
- Arrange on a lined sheet pan and roast, flipping halfway, 14 to 16 min., until crisp-tender.
Toast the peanuts
- Meanwhile, in a large pan, heat a drizzle of oil on medium.
- Add the peanuts and toast, stirring often, 1 to 2 min., until lightly browned and fragrant.
- Transfer to a bowl. Wipe out and reserve the pan.
Cook the chicken & make the sauce
- Pat the chicken dry; season with S&P.
- In the reserved pan, heat a drizzle of oil on medium-high.
- Add the chicken and cook, 3 to 4 min. per side, until lightly browned
- Add the soy sauce, vinegar, demi-glace, remaining garlic and ¼ cup water (double for 4 portions).
- Cook, flipping the chicken in the sauce occasionally, 4 to 6 min., until cooked through.
Plate your dish
- Divide the vegetables between your plates.
- Top with the chicken (slice beforehand if desired).
- Drizzle with the sauce.
- Garnish with the peanuts. Bon appétit!
