Imagine an eggroll without its wrapper. Known as lumpiang hubad in the Philippines, this tasty mix of finely chopped veggies cooked on a sheet pan is a colourful base for carb-wise plates. It’s topped with another fave: sweet and saucy organic chicken adobo.

  • 200g Green beans (or string peas)
  • 150g Shredded cabbage
  • 1 Onion (or shallot)
  • 3 Garlic cloves
  • 200g Multicoloured Nantes carrots
  • 30ml Sweet soy sauce
  • 30ml Rice vinegar
  • 25g Chopped peanuts
  • 30ml Vegetable demi-glace

Preparation

Mise en place

  • Preheat the oven to 450°F.

  • Remove the stem ends of the green beans; halve crosswise on an angle.

  • Halve the carrots lengthwise; thinly slice crosswise.

  • Halve, peel and thinly slice the onion.

  • Roughly chop the garlic.

Roast the vegetables

  • In a large bowl, combine the green beans, carrots, cabbage, onion, ⅔ of the garlic, a drizzle of oil and S&P.

  • Arrange on a lined sheet pan and roast, flipping halfway, 14 to 16 min., until crisp-tender.

Toast the peanuts

  • Meanwhile, in a large pan, heat a drizzle of oil on medium.

  • Add the peanuts and toast, stirring often, 1 to 2 min., until lightly browned and fragrant.

  • Transfer to a bowl. Wipe out and reserve the pan.

Cook the chicken & make the sauce

  • Pat the chicken dry; season with S&P.

  • In the reserved pan, heat a drizzle of oil on medium-high.

  • Add the chicken and cook, 3 to 4 min. per side, until lightly browned

  • Add the soy sauce, vinegar, demi-glace, remaining garlic and ¼ cup water (double for 4 portions).

  • Cook, flipping the chicken in the sauce occasionally, 4 to 6 min., until cooked through.

Plate your dish

  • Divide the vegetables between your plates.

  • Top with the chicken (slice beforehand if desired).

  • Drizzle with the sauce.

  • Garnish with the peanuts. Bon appétit!
