Protein Upgrade | French Onion ORGANIC Beef Meatloaves Au Gratin
with Roasted Green Bean Amandine
We’re taking meatloaf from mid to marvellous. Keto-friendly almond flour is worked in, followed by a basting of Dijon and beef demi-glace for extra flavour, plus a melty cheddar finish. Roasting alongside are green beans with oven-crisped almonds for crackle.
We will send you:
- 340g Organic lean ground beef (raised without antibiotics by Canadian farmers)
- 300g Green beans (or string peas)
- 50g Diced onions
- 30g Almond flour
- 25g Almonds
- 24g Beef demi-glace
- 15ml Dijon mustard
- 60g Grated aged cheddar
- 9g Zesty Herbs spices (salt, garlic, dried carrots, spice, red bell pepper, sugar, curry powder (mustard), canola oil, onion, black pepper, lemon oil, citric acid)

Preparation

Prepare & start the meatloaves
- Preheat the oven to 450°F.
- In a large bowl, combine the beef, onions, almond flour, ½ the demi-glace, ½ the spices, 1 egg (double for 4 portions) and S&P.
- Form into 2 meatloaves (double for 4 portions) and drizzle with oil.
- Arrange on a lined sheet pan and roast, 8 to 10 min., until partially cooked.

Mise en place
- Meanwhile, remove the stem ends of the green beans. In a medium bowl, toss with a drizzle of oil, the remaining spices and S&P.
- In a small bowl, combine the mustard and remaining demi-glace.

Finish the meatloaves & roast the green beans
- When the meatloaves are partially cooked, add the green beans.
- Roast, 5 to 8 min., until the meatloaves* are cooked through and the green beans are crisp-tender.
- Sprinkle the green beans with the almonds and roast, 1 to 2 min., until fragrant.

Finish & serve
- Switch the oven to broil.
- Brush the meatloaves with the mustard mixture. Top with the cheese.
- Broil, 2 to 3 min., until the cheese has melted.
- Divide the meatloaves and green beans between your plates. Bon appétit!
