It’s been a while since we adopted the word hygge into our vocabulary—in Scandinavian countries, it refers to a state of cozy contentment. This chicken recipe—certified organic, so it’s better for you and the environment—creates the mood with wintry goods like apple and cabbage buttered up with fresh thyme, allspice and nutmeg.

  • 1 Lemon
  • 300g Shredded cabbage
  • 1 Apple
  • 1 Onion (or shallot)
  • 4g Thyme
  • 12g Chicken demi-glace
  • 8.5g Scandinavian Styles spices (enriched wheat flour, onion, garlic, salt, allspice, nutmeg)

Preparation

Start the chicken

  • Preheat the oven to 450°F.

  • Pat the chicken dry; season with ⅔ of the spices and S&P.

  • In a large, oven-safe pan, heat a drizzle of oil on medium.

  • Add the chicken* and cook, partially covered, 4 to 5 min. per side, until partially cooked.

  • Transfer to a cutting board, leaving any browned bits in the pan. Reserve the pan.

Mise en place

  • Meanwhile, halve the lemon; juice ½and quarter the remaining ½.

  • Halve, peel and thinly slice the onion.

  • Core and medium-dice the apple; toss with a splash of the lemon juice to prevent browning.

  • Pick the thyme leaves off the stems; roughly chop the leaves.

Cook the vegetables & make the sauce

  • Heat the reserved pan on medium-high.

  • Add the onion and sauté, scraping up any browned bits, 2 to 3 min., until beginning to soften.

  • Add the apple and 3 tbsp butter (double for 4 portions). Sauté, 2 min., until caramelized.

  • Add the thymecabbage and remaining spices. Sauté, 2 min., until softened.

  • Add ¾ cup water (double for 4 portions), the demi-glace, remaining lemon juice and S&P; stir well.

Finish the chicken

  • To the pan, add the chicken.

  • Cover, transfer to the oven and bake, 15 min., until the chicken* is cooked through and the sauce has thickened.

Plate your dish

  • Divide the chicken (slice beforehand if desired), vegetables and sauce between your plates.

  • Garnish with the lemon wedges. Bon appétit!
