Pub-Style Grilled Beef Patties
over Minty Pea Salad & Grain Mustard Vinaigrette
Welcome to your favourite carb-conscious pub. Supper is deliciously British, with a salad of green peas, crisp radishes and freshly chopped mint in a mustard-cider vinaigrette. It’s also hearty and savoury, with grilled ground beef fortified with egg and almond flour.
We will send you:
- 250g Canadian-raised lean ground beef
- 14g Mint
- 100g French radishes
- 180g Baby greens (lettuce mix, baby spinach, kale or arugula)
- 30g Almond flour
- 30ml Apple cider vinegar
- 150g Green peas
- 15ml Whole-grain mustard
- 8g Nutritional yeast
- 8g Montpellier to Moscow spices (salt, onion, paprika, garlic, sugar, thyme, parsley, rosemary, green bell peppers, mustard, cumin, Cayenne pepper, canola oil, bay leaves)

Preparation

Mise en place
- Heat the BBQ on high (or pan on medium-high), making sure to oil the grill first.
- Pick the mint leaves off the stems; roughly chop ¾ of the leaves.
- Thinly slice the radishes.
- In a small bowl, combine the peas and 1 tbsp water (double for 4 portions). Cover tightly with plastic wrap. Microwave, 1 to 2 min., until warmed through.

Prepare the patties
- In a medium bowl, combine the beef, almond flour, 1 egg (double for 4 portions), the spices and S&P.
- Form into 6 patties (double for 4 portions).

Grill the patties
- Add the patties* to the BBQ (or pan) and grill, 3 to 5 min. per side, until cooked through.

Make the salad
- Meanwhile, in a large bowl, whisk the vinegar, mustard, nutritional yeast, ¼ cup oil (double for 4 portions) and S&P.
- Add the radishes, peas, chopped mint and baby greens; toss well.

Plate your dish
- Divide the patties and salad between your plates.
- Garnish with the remaining mint. Bon appétit!
