Quick Pork & Cauliflower 'Rice' Bibimbap
with Spicy Gochujang Cucumbers
Let’s cue up some cozy Korean cooking, minus the carbs. Grains of cauliflower and shredded cabbage stand in for rice in these hearty bowls, which hit the sweet spot and the hot spot with a combo of gochujang chili paste and honey.
We will send you:
- 250g Canadian-raised lean ground pork
- 150g Shredded cabbage
- 15ml Minced garlic
- 200g Cauliflower ‘rice’ (chopped cauliflower)
- 2 Cucumbers
- 30ml Sweet soy sauce
- 7g Honey
- 15g Gochujang
- 15ml Toasted sesame oil
- 12g Mellow Sesame spices (brown sugar, white sesame, garlic, canola oil, sea salt, ginger, paprika flavour, black pepper, cellulose)

Preparation
Cook the pork
- In a large pan, heat a generous drizzle of oil on medium-high.
- Add the garlic and sauté, 30 sec. to 1 min., until fragrant.
- Add the pork*; season with the spices and S&P.
- Cook, breaking up the meat, 4 to 6 min., until browned and cooked through.
Cook the cauliflower rice
- Meanwhile, roughly chop the cabbage.
- In a medium bowl, combine the cauliflower rice and cabbage.
- Cover tightly with plastic wrap and poke a few small holes.
- Microwave, 5 to 7 min., until softened.
- Add a drizzle of oil and S&P; stir well.
Make the gochujang sauce & dress the cucumbers
- Meanwhile, thinly slice the cucumbers crosswise.
- In a small bowl, whisk the soy sauce, gochujang (add ½ or ¼ for medium spicy), sesame oil, honey, black pepper and 1 tbsp water (double for 4 portions).
- In a large bowl, combine the cucumbers and ½ the gochujang sauce.
Plate your dish
- Divide the cauliflower rice between your bowls.
- Top with the pork and cucumbers.
- Serve the remaining gochujang sauce on the side. Bon appétit!
