The salty sweet flavours of these prized Japanese skewers shine through, except the usual grilling technique is streamlined for the sheet pan. Chicken thighs roast alongside wedges of sesame-spiced sweet potatoes, while a crisp ponzu-dressed cucumber salad refreshes between bites.

  • 2 Scallions
  • 450g Sweet potatoes
  • 3 Cucumbers
  • 30ml Ponzu lime sauce
  • 30ml Teriyaki glaze
  • 6 Bamboo skewers
  • 12g Mellow Sesame spices (brown sugar, sea salt, white sesame seeds, garlic, sunflower oil, paprika oleoresin, ginger, black pepper)

Preparation

Start the sheet pan

  • Preheat the oven to 450°F.

  • Cut the sweet potatoes lengthwise into ½ inch wedges.

  • On a lined sheet pan, toss with a drizzle of oil, ½ the spices and S&P.

  • Roast, 7 to 9 min., until partially cooked.

Finish the sheet pan

  • Meanwhile, in a small bowl, make the sauce by combining the teriyaki sauce and ½ the ponzu.

  • Pat the chicken dry and cut into bite-size pieces. In a medium bowl, toss with the remaining spices, ½ the sauce and S&P.

  • Thread the chicken onto the skewers, leaving 1-inch free on the bottom.

  • When the sweet potatoes are partially cooked, flip and add the skewers.

  • Roast, flipping and brushing the chicken with the remaining sauce halfway, 15 to 18 min., until the chicken* is cooked through and the sweet potatoes are tender.

  • Switch the oven to broil, 2 to 3 min., until beginning to brown.

Make the cucumber salad

  • Meanwhile, thinly slice the scallions crosswise.

  • Small-dice the cucumbers.

  • In a second medium bowl, combine the cucumbers, scallions, remaining ponzu, a drizzle of oil and S&P.

Plate your dish

  • Divide the sheet pan between your plates.

  • Top with the cucumber salad. Bon appétit!
