Get the satisfying cheese-smothered experience of enchiladas, without the whole enchilada! We’re making life even easier by letting the contents spill out over warm white rice. Morsels of ground beef are browned in Sweet Hickory BBQ spices, amplified with a blast of our signature sweet and mellow BBQ sauce. Mingling with the meat are bite-size pieces of cauliflower and green zucchini. An aged cheddar finish in the oven gives it a golden glow.

  • 1 Green zucchini
  • 30ml BBQ sauce
  • 160g White rice
  • 30ml Vegetable demi-glace

Preparation

Cook the rice
Preheat the oven to 450°F. In a medium pot, combine the rice, 1 ¼ cups water (double for 4 portions) and a big pinch of salt; bring to a boil. Reduce the heat, cover and simmer, 17 to 20 min., until the rice is tender and the water has been absorbed. Remove from the heat and let sit, covered, for 5 min. Fluff the rice.

Meanwhile, medium-dice the zucchini. Roughly chop the cauliflower.

Start the beef & vegetables
In a large, oven-safe pot, heat a drizzle of oil on medium-high. Add the garlic and sauté, 30 sec. to 1 min., until fragrant. Add the beef; season with the spices. Cook, breaking up the meat, 2 to 3 min., until partially cooked. Add the cauliflower and zucchini. Cook, stirring frequently, 4 to 5 min., until beginning to soften and the beef* is cooked through; season with S&P.

Finish the beef & vegetables
To the pot of beef and vegetables, add the BBQ sauce, demi-glace and 2 tbsp water (double for 4 portions). Top with the cheese. Transfer to the oven and bake, 6 to 8 min., until the cheese has melted. Switch the oven to broil, 1 to 2 min., if extra colour is desired.

Plate your dish
