Spicy Impossible™ Beef Al Pastor Bowls
with Chipotle in Adobo & Sweet Potatoes
What makes al pastor such a popular Mexican order? In this version, it might be the hint of pineapple juice, the latent heat of chipotle or even that splash of lime. They all surface in a hearty base topped with roasted sweet potatoes and a crisp radish salad.
We will send you:
- 1 Head of lettuce
- 2 Impossible™ beef burger patties (made from plants)
- 1 Lime
- 14g Cilantro
- 200g Radishes
- 450g Sweet potatoes
- 30ml BBQ sauce
- 30ml Pineapple juice
- 160g White rice
- 1 Chipotle pepper in adobo

Preparation

Roast the sweet potatoes
- Preheat the oven to 450°F.
- Medium-dice the sweet potatoes.
- On a lined sheet pan, toss with a drizzle of oil and S&P.
- Roast, stirring halfway, 20 to 25 min., until golden brown and tender.

Cook the rice
- Meanwhile, in a medium pot, combine the rice, 1 ¼ cups water (double for 4 portions) and a big pinch of salt; bring to a boil.
- Reduce the heat, cover and simmer, 17 to 20 min., until the rice is tender and the water has been absorbed.
- Remove from the heat and let sit, covered, for 5 min. Fluff the rice.

Mise en place
- Meanwhile, juice the lime.
- Thinly slice the lettuce crosswise.
- Roughly chop the cilantro leaves and stems.
- Thinly slice the radishes.
- Crumble the patties.
- Roughly chop the chipotle pepper, reserving the adobo sauce.

Cook & coat the crumbled patties
- In a medium pan, heat a drizzle of oil on medium.
- Add the crumbled patties and cook, stirring occasionally, 3 to 5 min., until beginning to brown.
- Add the chipotle pepper and adobo sauce (add ½ for medium spicy), BBQ sauce, pineapple juice, ⅓ of the lime juice and S&P.
- Cook, stirring often, 1 to 2 min., until beginning to thicken.

Make the salad
- Meanwhile, in a medium bowl, combine the lettuce, radishes, remaining lime juice, ½ the cilantro, 1 tbsp oil (double for 4 portions) and S&P.

Plate your dish
- Divide the rice between your bowls.
- Top with the sweet potatoes, crumbled patties and salad.
- Garnish with the remaining cilantro. Bon appétit!
