Sweet Chili Glazed Beef Meatballs
with Garlicky Broccoli & Edamame over Rice
Set the comfort level on high! In the background there’s warm white rice. It’s topped with a fun mix of garlicky veggies, along with beef meatballs puffed with panko and sesame-nori spices. A coating of sweet chili sauce gives them a special glow as they come out of the Air Fryer.

- 250g Canadian-raised lean ground beef
- 1 Head of broccoli
- 2 Garlic cloves
- 150g Edamame (or green peas)
- 160g White rice
- 30ml Sweet chili sauce
- 30g Panko
- 10g South Seas spices (brown sugar, sea salt, white sesame seeds, black sesame seeds, garlic, sunflower oil, paprika oleoresin, ginger, black pepper, silicon dioxide, crushed nori)

Preparation

Cook the rice
- Preheat the air fryer to 400°F. Lightly oil the basket.
- In a medium pot, combine the rice, 1 ¼ cups water and a big pinch of salt (double the water and salt for 4 portions); bring to a boil.
- Reduce the heat, cover and simmer, 17 to 20 min., until the rice is tender and the water has been absorbed.
- Remove from the heat and let sit, covered, for 5 min. Fluff the rice.

Fry the vegetables
- Meanwhile, mince the garlic.
- Cut the broccoli head into small florets.
- In a large bowl, combine the broccoli, edamame, a drizzle of oil, ⅓ of the spices and S&P.
- Add 1 tbsp water (double for 4 portions) and the vegetables to the air fryer.
- Fry, shaking and adding ½ the garlic halfway, 6 to 8 min., until tender.
- Transfer to a plate and reserve the bowl.

Prepare the meatballs
- In the same bowl, combine the beef, panko, remaining garlic and spices, and S&P.
- Form into 8 meatballs (double for 4 portions).

Fry & glaze the meatballs
- Place the meatballs* in the air fryer and fry, 10 to 12 min., until cooked through.
- Transfer to a second large bowl and drizzle with the chili sauce; toss gently.

Plate your dish
- Divide the rice between your plates.
- Top with the meatballs and vegetables. Bon appétit!
