What do you get when you make a stir-fry in the air fryer? A delicious Asian air-fry, of course! Shrimp and veggies bring bright colours and textures to the plate with minimal oil and clean up. (Bonus: no pot needed for the rice.)

  • 15ml Minced garlic
  • 45ml Stir-fry sauce
  • 227g Pre-cooked jasmine rice
  • 45ml Sweet soy sauce
  • 15ml Toasted sesame oil
  • 9g Black & white sesame seeds

Preparation

Mise en place

  • Preheat the air fryer to 375°F. Lightly oil the basket.

  • Halve, core and medium-dice the sweet pepper.

  • Quarter the zucchini lengthwise; cut crosswise into ½ inch pieces.

  • In a small bowl, make the sauce by combining the soy sauce, stir-fry sauce and sesame oil (start with ½).

Fry the shrimp & vegetables

  • Pat the shrimp dry (remove the shells from the tails if desired); season with S&P.

  • In a medium bowl, combine the sweet pepper, zucchini, garlic and ⅓ of the sauce.

  • In a second medium bowl, combine the shrimp and ½ the remaining sauce.

  • Place the vegetables in the air fryer and fry, 3 min., until beginning to soften.

  • Place the shrimp* in the air fryer and fry, 3 to 5 min., until opaque and cooked through.

Warm the rice

  • Meanwhile, poke small holes in the bag of rice.

  • Microwave, 1 ½ to 2 min., until heated through.

Plate your dish

  • Divide the rice between your plates.

  • Top with the shrimp and vegetables.

  • Garnish with the sesame seeds.

  • Drizzle with the remaining sauce. Bon appétit!
