Thai-Style Lemongrass Ground Beef Tacos
with Zingy Cucumber-Peanut Slaw
Rethink tacos with Thai ingredients and what do you get? Thai-cos! Citrusy and floral, minced lemongrass has a heady fragrance all its own. When combined with garlic, sticky-thick sweet soy sauce and lime, it finds perfect equilibrium on browned ground beef. Set up a cool, crisp contrast with a slaw of shredded cabbage and cucumbers, percolated with lime juice and chopped peanuts for rich crunch. Now, those warm tortillas await!

- 150g Shredded cabbage
- 15ml Minced garlic
- 2 Cucumbers
- 1 Lime
- 15g Minced lemongrass
- 25g Chopped peanuts
- 30ml Sweet soy sauce
- 6 Wheat flour tortillas

Preparation

Toast the peanuts
In a medium pan, heat a drizzle of oil on medium. Add the peanuts and toast, stirring frequently, 1 to 2 min., until lightly browned and fragrant. Transfer to a bowl. Wipe out and reserve the pan.

Mise en place
Meanwhile, halve the cucumbers lengthwise; thinly slice crosswise on an angle. Juice the lime.

Cook & coat the beef
In the reserved pan, heat a drizzle of oil on medium-high. Add the garlic and lemongrass (start with ½). Sauté, 1 to 2 min., until fragrant. Add the beef*; season with S&P. Cook, breaking up the meat, 4 to 6 min., until cooked through. Add the soy sauce and ½ the lime juice. Cook, stirring frequently, 1 to 2 min., until combined.

Make the slaw
Meanwhile, in a medium bowl, combine the cabbage, cucumbers, peanuts, remaining lime juice, 2 tbsp oil (double for 4 portions) and S&P.

Warm the tortillas
Wrap the tortillas in a slightly dampened paper towel. On a plate, microwave, in 10 sec. increments, until warm.

Plate your dish
Divide the tortillas between your plates. Top with the beef and a spoonful of the slaw. Serve the remaining slaw on the side. Bon appétit!
