Three Cheese Pizza Bianca
with Roasted Garlic & Broccoli
Can everyone count to three in Italian? Ricotta, mozzarella, Grana Padano! This cheesy trio gets all over, into and under bite-size broccoli atop golden-brown baked pizza dough. All it needs is a final drizzle of cream, and supper is molto bene.

- 1 Head of broccoli
- 1 Onion (or shallot)
- 15g Minced roasted garlic
- 30ml Heavy cream
- 100g Ricotta
- 25g Grana Padano (contains rennet)
- 90g Grated mozzarella
- 1 Pizza dough
- 10g Garlic & Sweet Pepper spices (salt, garlic, sugar, red pepper bell, vinegar powder, yeast extract, green pepper bell, canola oil, paprika, cellulose, turmeric, Cayenne pepper, citric acid)

Preparation

Mise en place
- Preheat the oven to 450°F.
- Set the dough aside to come up to room temperature.
- Cut the broccoli head into bite-size florets.
- Peel and thinly slice the onion into rounds; separate the rounds.
- In a small bowl, combine the ricotta, garlic, ½ the spices and S&P.

Assemble the pizza
- On the back of a well-oiled sheet pan, stretch the dough out to a ½ inch thickness for a thick crust or ¼ inch for a thin crust.
- Drizzle with oil and spread with the ricotta mixture.
- Top with the broccoli, onion, mozzarella and Grana Padano.
- Season with the remaining spices and S&P.

Bake the pizza
- Bake the pizza, 16 to 20 min., until the dough is golden brown.
- Switch the oven to broil, 2 to 3 min., if extra colour is desired.

Finish & serve
- Transfer the pizza to a cutting board.
- Drizzle with the cream and cut into wedges.
- Divide the pizza between your plates. Bon appétit!
