This Indonesian street food fave is something you could cook every day—and we've made it so easy, you just may want to! The delicious combo of saucy strands, aromatics and Asian greens is topped with garlic-sesame fried peanuts for quick food stall deliciousness.

Preparation

Boil the noodles

  • Bring a medium pot of salted water to a boil.

  • Add the noodles; stir gently to separate.

  • Boil, 5 to 7 min., until al dente.

  • Drain and toss with a drizzle of oil to prevent sticking.

Mise en place

  • Meanwhile, remove the bottom inch of the gai lan stems; chop the leaves and stems.

  • Halve, core and thinly slice the sweet pepper lengthwise.

Make the spiced peanuts

  • In a large pan, heat a drizzle of oil on medium.

  • Add the peanuts, ½ the garlic and ⅓ of the spices.

  • Toast, stirring often, 1 to 2 min., until lightly browned and fragrant.

  • Transfer to a bowl. Wipe out and reserve the pan.

Sauté the vegetables

  • In the same pan, heat a drizzle of oil on medium.

  • Add the sweet pepper, gai lan, ginger and remaining garlic.

  • Sauté, 3 to 4 min., until tender; season with the remaining spices.

Combine the noodles

  • To the pan, add the soy sauceponzu, 2 tbsp water (double for 4 portions) and noodles.

  • Cook, stirring often, 1 to 3 min., until the noodles are coated and combined.

Plate your dish

  • Divide the noodles between your bowls.

  • Garnish with the spiced peanuts. Bon appétit!
