Vegetarian Egg Roll Bowls
with String Peas & Sweet Pepper
We’re craving all the fun, finely chopped textures of a classic egg roll filling, unrolled for easy access. This all-veggie spread—featuring cabbage, string peas and sweet pepper—is flavoured with ponzu and sesame, and laid out over a bed of jasmine rice.
We will send you:
- 150g Shredded cabbage
- 200g String peas (sugar snap peas or snow peas)
- 2 Scallions
- 1 Sweet pepper
- 15ml Minced garlic
- 15ml Toasted sesame oil
- 60ml Ponzu lime sauce
- 160g Jasmine rice
- 12g Mellow Sesame spices (brown sugar, sea salt, white sesame seeds, garlic, sunflower oil, paprika oleoresin, ginger, black pepper)

Preparation
Cook the rice
- In a medium pot, combine the rice, 1 ½ cups water (double for 4 portions), ½ the spices and a pinch of salt; bring to a boil.
- Reduce the heat, cover and simmer, 14 to 16 min., until the rice is tender and the water has been absorbed.
- Remove from the heat and let sit, covered, for 5 min. Fluff the rice.
Mise en place
- Meanwhile, thinly slice the scallions crosswise, separating the white bottoms and green tops.
- Halve, core and thinly slice the sweet pepper lengthwise.
- Remove the stem ends of the string peas; cut crosswise into thirds.
Sauté the vegetables
- In a large pan, heat the sesame oil and a drizzle of oil on medium-high.
- Add the white bottoms of the scallions and garlic. Sauté, 30 sec. to 1 min., until fragrant.
- Add the sweet pepper and ½ the remaining spices. Sauté, 3 to 4 min., until tender; season with S&P.
- Add ½ the ponzu; stir well.
Dress the cabbage
- Meanwhile, in a medium bowl, combine the cabbage, string peas, green tops of the scallions, remaining ponzu and spices, a drizzle of oil and S&P.
Plate your dish
- Divide the rice between your bowls.
- Top, side by side, with the vegetables and cabbage. Bon appétit!
