with Crispy Onions & Fresh Shanghai Noodles

- 450g Fresh Shanghai noodles
- 60ml Sweet soy sauce
- 150g Green peas
- 45ml Pineapple chili sauce
- 12g Crispy onions
- 12g Mellow Sesame spices (brown sugar, sea salt, white sesame, garlic, canola oil, ginger, paprika flavour, black pepper, cellulose)

Boil the noodles
- Bring a large pot of salted water to a boil.
- Add the noodles; stir gently to separate.
- Boil, 5 to 7 min., until al dente.
Reserving ½ cup cooking water, drain and toss with a drizzle of oil to prevent sticking.

Mise en place
- Meanwhile, halve the lime; juice ½ and quarter the remaining ½.
- Cut the broccoli head into bite-size florets.

Cook the broccoli & peas
- In a large, high-sided pan, heat a drizzle of oil on medium.
- Add the broccoli, ¼ cup water and the spices. Cook, covered, stirring occasionally, 7 to 10 min., until crisp-tender.
- Add the soy sauce, chili sauce, lime juice and peas. Sauté, 1 to 2 min., until warmed through.

Combine the noodles
- Increase the pan to medium-high.
- Add the noodles, spinach, ½ the reserved cooking water and S&P.
- Cook, stirring often, 1 to 2 min., until combined and the spinach has wilted.
- If the sauce seems dry, gradually add the remaining cooking water until you achieve your desired consistency.

Plate your dish
- Divide the noodles between your bowls.
- Garnish with the crispy onions and lime wedges. Bon appétit!
