Preparation

Boil the noodles

  • Bring a large pot of salted water to a boil.

  • Add the noodles; stir gently to separate.

  • Boil, 5 to 7 min., until al dente.


  • Reserving ½ cup cooking water, drain and toss with a drizzle of oil to prevent sticking.

  • Meanwhile, halve the lime; juice ½ and quarter the remaining ½.

  • Cut the broccoli head into bite-size florets.

Cook the broccoli & peas

  • In a large, high-sided pan, heat a drizzle of oil on medium.

  • Add the broccoli, ¼ cup water and the spices. Cook, covered, stirring occasionally, 7 to 10 min., until crisp-tender.

  • Add the soy sauce, chili sauce, lime juice and peas. Sauté, 1 to 2 min., until warmed through.

Combine the noodles

  • Increase the pan to medium-high.

  • Add the noodles, spinach, ½ the reserved cooking water and S&P.

  • Cook, stirring often, 1 to 2 min., until combined and the spinach has wilted.

  • If the sauce seems dry, gradually add the remaining cooking water until you achieve your desired consistency.

Plate your dish

  • Divide the noodles between your bowls.

  • Garnish with the crispy onions and lime wedges. Bon appétit!
