Za'atar Chicken Traybake
with Creamy Lemon Dressing
A flavourful mix of sesame seeds, herbs and citrus zest, za’atar is the spice blend that keeps on giving. It coats tender chicken, sizzled with cauliflower and potatoes for the perfect Middle Eastern-inspired family sheet pan. Complete it with roasted garlic-and-lemon mayo.

- 4 Canadian-raised chicken breasts (air chilled)
- 900g Potatoes
- 1 Head of cauliflower
- 15g Minced roasted garlic
- 90ml Mayonnaise
- 10g Za’atar (sesame seeds, oregano, basil, thyme, savory, lemon peel, marjoram, kosher salt)
- 15ml Lemon juice

Preparation
Mise en place
- Preheat the oven to 450°F.
- Medium-dice the potatoes.
- Cut the cauliflower head into large florets.
- Pat the chicken dry; rub with the za'atar, a drizzle of oil and S&P.
Roast the traybake
- On a lined sheet pan (use 2 sheet pans if necessary), toss the potatoes and cauliflower with a drizzle of oil and S&P.
- Roast, 7 to 10 min., until partially cooked.
- Add the chicken and roast, flipping halfway, 20 to 25 min., until the chicken* is cooked through and the vegetables are tender.
Make the dressing
- Meanwhile, in a medium bowl, combine the mayo, garlic, lemon juice and S&P.
Plate your dish
- Divide the traybake (slice the chicken beforehand if desired) between your plates.
- Drizzle with the dressing. Bon appétit!
