Za’atar-Grilled Veggie Flatbreads
with Honey & Almonds
For a blast of colour, these grilled flatbreads are topped with two attention-getting veggies: elegant tassels of broccolini and bold yellow zucchini, crackling with sliced almonds. The rest is a balance of sweet, creamy and savoury, thanks to honey, labneh and ever-powerful za’atar.

- 1 Yellow zucchini
- 1 Bunch of broccolini
- 14g Honey
- 25g Almonds
- 60ml Labneh
- 2 Naan
- 10g Za’atar (sesame seeds, oregano, basil, thyme, savory, lemon peel, marjoram, kosher salt)

Preparation

Mise en place
- Heat the BBQ on high, making sure to oil the grill first.
- Remove the bottom inch of the broccolini stems (halve lengthwise if large).
- Cut the zucchini lengthwise into ½ inch pieces.

Grill the vegetables
- In a large bowl, combine the zucchini, broccolini, a drizzle of oil, ½ the za'atar and S&P.
- Add to the BBQ and grill, 2 to 3 min. per side, until browned and tender.
- Transfer to a cutting board and roughly chop.

Grill the naan
- Spread the naan with the labneh. Top with the remaining za'atar.
- Add to the BBQ and grill, 1 to 2 min., until beginning to brown.

Plate your dish
- Divide the naan (cut into wedges) between your plates.
- Top with the vegetables and almonds (roughly chop if whole).
- Drizzle with the honey. Bon appétit!
