Frankly my dear, we do give a dan! An icon of Chinese street food, dan dan noodles deliver the goods with simplicity and speed (a mere 10 minutes of cooking time). The secret ingredient in this recipe is tahini: the sesame paste coats each strand of fresh egg noodles. Its creamy richness is reinforced with garlic-sautéed peanuts, tumbled with tender ground pork, Asian greens and baby bok choy.

Preparation

Cook the pork
Bring a medium pot of salted water to a boil. In a large pan, heat a generous drizzle of oil on medium-high. Sauté the peanuts and garlic, 30 sec. to 1 min., until fragrant. Add the pork*; season with ½ the spices and S&P. Cook, breaking up the meat, 4 to 6 min., until nicely browned and cooked through.

Boil the noodles
Meanwhile, add the noodles to the pot of boiling water; stir gently to separate. Boil, 2 to 4 min., until al dente. Reserving ½ cup cooking water (double for 4 portions), drain and rinse. Toss with a drizzle of oil to prevent sticking.

Meanwhile, remove the root ends of the yu choy and bok choy; roughly chop. Combine in a bowl.

Cook the vegetables
To the pan of pork, add the yu choy and bok choy. Cook, stirring frequently, 2 to 4 min., until beginning to soften; season with the remaining spices.

Combine the noodles & serve
To the pan of pork and vegetables, add the noodles, soy sauce, mirin, tahini and ½ the reserved cooking water. Cook, stirring frequently, 1 to 2 min., until the noodles are coated. If the sauce seems dry, gradually add the remaining cooking water until you achieve your desired consistency. Divide the noodles between your bowls. Garnish with freshly cracked black pepper.
