Preparation
Mise en place
Heat the BBQ on high, making sure to oil the grill first. Cut the eggplants crosswise into ½ inch pieces. Halve, core and quarter the sweet pepper lengthwise. In a large bowl, combine the eggplants, sweet pepper, a drizzle of oil, ½ the garlic and S&P. In a small bowl, combine the mayo, a pinch of the spices and S&P.
Prepare the patties
In a second large bowl, combine the pork, remaining garlic and spices, and S&P. Form into 2 patties (double for 4 portions).
Grill the vegetables & patties
Add the patties* to the BBQ and grill, 3 to 5 min. per side, until cooked through. Add the vegetables to the BBQ and grill, turning occasionally, 6 to 8 min., until browned and tender. Transfer to a plate and drizzle the vegetables with the vinegar.
Grill the buns
Add the buns, cut-sides down, to the BBQ and grill, 1 to 2 min., until warmed through.
Plate your dish
Divide the bun bottoms between your plates. Top each bun bottom with the mayo, a patty, a spoonful of the vegetables and a bun top. Serve the remaining vegetables on the side. Bon appétit!
