BBQ Pork Kofta & Veggies
with Grilled Lemon, Tzatziki & Fresh Mint
Grillway to heaven! Crank up the barbecue (or heat up the grill pan) for an easy breezy meal that’s delightfully designed for a warm night. You’ll form ground pork into kofta—as meatballs are known from the Middle East to Central Asia—with minced garlic and a sprinkle of lemony seasonings. As they brown, get the zucchini, sweet pepper and halved lemon sizzling alongside. Serve the works with creamy tzatz and fresh mint to finish on a high note.

- 15ml Minced garlic
- 1 Bunch of mint
- 1 Lemon
- 2 Zucchini (green, yellow or heirloom)
- 1 Sweet pepper
- 120g Garlic-cucumber yogurt (tzatziki)
- 2 Artisanal pita
- 9g Lemony Dill & Marjoram spices (paprika, salt, black pepper, garlic, sugar, onion, lemon peel, dill, coriander, rosemary, marjoram, parsley, sunflower oil, lemon flavour, chili pepper, bay leaf, lemon oil)

Preparation
Mise en place
Heat the BBQ on high, making sure to oil the grill first. Quarter the zucchini lengthwise; halve crosswise. Core and cut the sweet pepper lengthwise into 1-inch pieces. Pick the mint leaves off the stems; roughly chop the leaves. Halve the lemon.
Prepare & grill the kofta
In a large bowl, combine the pork, garlic, ½ the spices and S&P. Form into 6 oval patties (double for 4 portions). Add the kofta* to the BBQ (or to a grill pan heated with a drizzle of oil on medium-high) and grill, 3 to 4 min. per side, until cooked through. Transfer to a plate and reserve the grill pan, if using.
Grill the vegetables & lemon
In a second large bowl, combine the zucchini, sweet pepper, lemon, a drizzle of oil, the remaining spices and S&P. Add the vegetables and lemon, cut-sides down, to the BBQ (or to the reserved grill pan heated on medium-high) and grill, turning occasionally, 2 to 3 min., until browned and tender. Return to the bowl and reserve the grill pan, if using.
Grill the pita
Add the pita to the BBQ (or to the reserved grill pan heated with a drizzle of oil on medium) and grill, 30 sec. to 1 min. per side, until lightly browned. Transfer to a cutting board. Once cool enough, cut into wedges.
Plate your dish
Divide the tzatziki between your plates and spread out in a circular motion. Top with the kofta, vegetables and pita. Garnish with the mint and lemon. Bon appétit!
*Health Canada recommends cooking ground pork to a minimum internal temperature of 71°C.
