Beef & Caramelized Onion Meatballs in Tomato Sauce
with Roasted Potatoes & Brussels Sprouts
For the definition of sweet and savoury, look no further than these beautifully balanced meatballs. You’ll amp up a hefty portion of ground beef with our ready-to-use caramelized onions, minced garlic and lively seasonings, formed into rounds for pan-cooking. Once they’re browned all over, the meatballs bathe in a vibrant, garlicky tomato sauce. Roasted Brussels sprouts and baby potatoes slip out of the oven to meet these flavourful fellas on the plate.

Preparation
Roast the vegetables
Preheat the oven to 400°F. Quarter the potatoes. Remove the root ends of the Brussels sprouts; halve lengthwise (quarter if large). On a lined sheet pan, toss with a drizzle of oil, ⅓ of the spices and S&P. Roast, stirring halfway, 20 to 25 min., until browned and tender.
Prepare the meatballs
Meanwhile, mince the garlic. In a large bowl, combine the beef, onions, ⅔ of the garlic and ½ the remaining spices. Form into 8 meatballs (double for 4 portions) about the size of a golf ball.
Cook the meatballs
In a medium pan, heat a drizzle of oil on medium-high. Add the meatballs* and cook, partially covered, turning occasionally, 8 to 10 min., until browned and cooked through.
Make the sauce & coat the meatballs
To the pan of meatballs, add the remaining garlic. Cook, stirring frequently, 30 sec. to 1 min., until fragrant. Add the tomato sauce and remaining spices. Cook, spooning the sauce over the meatballs, 2 to 3 min., until coated and the flavours have combined.
Plate your dish
Divide the vegetables between your plates. Top with the meatballs and sauce. Bon appétit!
