Beef Ćevapi with Ajvar
String Beans & Warm Pita
Think sausage, meatball and patty, all rolled into one. In the Balkans, ćevapi is a hearty, homey preparation featuring minced meat bursting with juicy flavours. To your ground beef, simply work in some freshly chopped parsley, a good dose of tangy seasonings, and last but not least, ajvar—the regional red pepper paste with its own distinctive vibrancy. Brown them with onions, and serve alongside glowing green string beans and oven-warmed pita.

- 60ml Roasted red pepper spread
- 2 Pita

Preparation
Mise en place
Preheat the oven to 450°F. Remove the stem ends of the string beans. Roughly chop the parsley leaves and stems.
Prepare & cook the ćevapi
In a large bowl, combine the beef, garlic, ¼ of the roasted red pepper spread, ½ the parsley, ½ the spices and S&P. Form into 6 oval patties (double for 4 portions). In a large pan, heat a drizzle of oil on medium-high. Add the ćevapi and cook, 2 to 3 min. on one side, until partially cooked. Flip and add the onions. Cook, stirring occasionally, 2 to 3 min., until the ćevapi* are cooked though and the onions have softened.
Cook the string beans
Meanwhile, in a second large pan, heat a drizzle of oil on medium-high. Add the string beans and sauté, 2 to 3 min., until beginning to soften. Add 1 tbsp water (double for 4 portions), the remaining spices and S&P. Cook, partially covered, 1 to 2 min., until crisp-tender.
Warm the pita
Meanwhile, warm the pita directly on an oven rack, 1 to 2 min., until soft and pliable. Transfer to a cutting board and halve.
Plate your dish
Divide the ćevapi, onions, string beans and pita between your plates. Garnish with the remaining parsley. Serve the remaining roasted red pepper spread on the side. Bon appétit!
