Beef & Zucchini Pita Burgers
with Hummus & Chopped Salad
Where’s the beef? Always a good question on burger night. But how about where’s the zucchini? The answer in this case is that it’s cleverly incorporated into the patties (along with diced onion and savoury herbs). Make it all Greek to them by serving these meaty burgers on rounds of warm pita, with a smear of hummus and a classic cuke and tomato salad tumbled over top. Next question: where’s the potatoes? We got those, too, hot from the oven!

- 1 Onion (or shallot)
- 1 Zucchini (green, yellow or heirloom)
- 2 Tomatoes
- 30ml White balsamic vinegar
- 120g Hummus

Preparation
Roast the potatoes
Preheat the oven to 450°F. Halve the potatoes (quarter if large). On a lined sheet pan, toss with a drizzle of oil, ⅓ of the spices and S&P. Roast, stirring halfway, 20 to 25 min., until browned and tender.
Mise en place
Meanwhile, grate the zucchini. Medium-dice the tomatoes. Quarter the cucumbers lengthwise; cut into ¼ inch pieces. Halve, peel and small-dice the onion.
Prepare & cook the patties
In a large bowl, combine the beef, zucchini, up to ½ the onion, ½ the remaining spices and S&P. Form into 4 oval patties. In a grill pan (or large pan), heat a drizzle of oil on medium-high. Cook the patties*, 3 to 5 min. per side, until cooked through.
Warm the pita
Meanwhile, warm the pita directly on an oven rack, 1 to 2 min., until soft and pliable.
Make the salad
In a second large bowl, combine the vinegar, remaining onion (start with ½), 3 tbsp olive oil, the remaining spices and S&P. Add the tomatoes and cucumbers; toss well.
Plate your dish
Divide the pita and potatoes between your plates. Top the pita with the hummus, a patty and a spoonful of the salad. Serve the remaining salad on the side. Bon appétit!
*Health Canada recommends cooking ground beef to a minimum internal temperature of 71°C.
