over Cauliflower ‘Rice’ with Feta
Let’s go for a Weekend on Mykonos. That’s the name of our signature spice blend, designed to evoke Greece with its mix of parsley, dill and oregano. The tasty herbs rise to the surface in this calorie-conscious skillet supper. It’s anchored by a hefty portion of gently browned ground pork, and permeated with veggies like wilted leafy greens and bright sweet pepper. Serve it over garlic-sautéed cauliflower ‘rice’, along with crumblings of feta cheese.

- 30ml Vegetable demi-glace

- 5g Weekend on Mykonos spices (parsley, oregano, dill, onion, garlic, kosher salt)

Preparation
Mise en place
Core and medium-dice the sweet pepper.
Cook the pork
In a large pan, heat a drizzle of oil on medium-high. Add the pork* and ½ the garlic; season with ⅔ of the spices and S&P. Cook, breaking up the meat, 4 to 6 min., until cooked through.
Make the skillet
To the pan of pork, add the sweet pepper. Cook, stirring frequently, 2 to 3 min., until beginning to soften. Add the demi-glace and ½ cup water (double for 4 portions); bring to a boil. Reduce the heat to simmer and cook, stirring frequently, 2 to 3 min., until the sauce has slightly thickened. Add the spinach and cook, stirring frequently, 2 to 3 min., until wilted; season with S&P.
Sauté the cauliflower rice
Meanwhile, in a medium pan, heat a drizzle of oil on medium-high. Add the remaining garlic and sauté, 30 sec. to 1 min., until fragrant. Add the cauliflower rice and sauté, 6 to 8 min., until softened; season with the remaining spices and S&P.
Plate your dish
Divide the cauliflower rice between your plates. Top with the skillet. Crumble the cheese over top. Bon appétit!
*Health Canada recommends cooking ground pork to a minimum internal temperature of 71°C.
