Carb-Wise: Greek-Style Ground Beef Bulgur Bowls
with Roasted Broccoli, Cherry Tomatoes & Tzatziki
A dollop of tzatziki is like a secret handshake—it’s agreed that we’re in for some fine Greek-inspired flavours. Daubing the creamy dip onto these bowls is the last thing you’ll do before digging in. Each hearty helping is lined with fluffy spiced bulgur, and then loaded with mouth-watering meat and veg. That means morsels of garlicky browned ground beef popping with bright cherry tomatoes. Add broccoli florets sprinkled with white balsamic vinegar and gently oven-crisped.

- 2 Garlic cloves
- 15ml White balsamic vinegar
- 80g Bulgur
- 60g Garlic-cucumber yogurt (tzatziki)

Preparation
Roast the broccoli
Preheat the oven to 450°F. Halve the broccoli if large. On a lined sheet pan, toss with a drizzle of oil, the vinegar, ⅓ of the spices and S&P. Roast, stirring halfway, 14 to 18 min., until tender.
Cook the bulgur
Meanwhile, in a medium pot, combine the bulgur, ¾ cup water (double for 4 portions), ½ the remaining spices and a big pinch of salt; bring to a boil. Reduce the heat, cover and simmer, 6 to 8 min., until the bulgur is tender and the water has been absorbed. Fluff and keep warm.
Mise en place
Meanwhile, halve the tomatoes. Grate the garlic.
Cook the beef
In a medium pan, heat a drizzle of oil on medium-high. Add the beef*; season with the remaining spices and S&P. Cook, breaking up the meat, 4 to 6 min., until cooked through. In the final 2 min., add the tomatoes and garlic; stir well.
Plate your dish
Divide the bulgur between your bowls. Top with the beef, broccoli and tzatziki. Bon appétit!
