Chicken Milanese
with Fettuccine Rosée & Broccoli
Things that both kids and grown-up kids adore? We’re three for three with juicy chicken breasts coated in golden-crisp panko, tender-crisp broccoli that roasts alongside, and a helping of fettuccine in creamy tomato sauce.
We will send you:
- 4 Canadian-raised chicken breasts (air chilled)
- 400g Broccoli florets
- 340g Fettuccine
- 200ml Tomato sauce
- 30ml Mayonnaise
- 80g Panko
- 60ml Heavy cream
- 15g Olive Branch spices (garlic, red pepper bell, dried black olives, basil, oregano, salt, parsley, lemon powder, sunflower oil, black pepper, cellulose)

Preparation
Mise en place
- Preheat the oven to 450°F.
- Bring a large pot of salted water to a boil.
- In a medium pan, heat a drizzle of oil on medium-high.
- Add the panko and toast, stirring often, 1 to 2 min., until golden brown.
- Transfer to a bowl and add a pinch of the spices.
Prepare the chicken
- Meanwhile, pat the chicken dry; season with ½ the remaining spices and S&P.
- In a medium bowl, combine the mayo, 2 tbsp water and S&P.
- Working one at a time, coat the chicken in the mayo mixture (shaking off any excess), then in the panko (pressing to adhere).
- Arrange on a lined sheet pan.
Bake the chicken & broccoli
- Bake the chicken*, 20 to 25 min., until cooked through.
- On a second lined sheet pan, toss the broccoli (halve if large) with a drizzle of oil and S&P.
- Roast, stirring halfway, 14 to 18 min., until tender.
Boil the pasta
- Meanwhile, add the pasta to the pot of boiling water; stir gently to separate.
- Boil, 10 to 12 min., until al dente.
- Reserving ¼ cup cooking water, drain and toss with a drizzle of oil to prevent sticking.
- Reserve the pot.
Make the sauce & combine the pasta
- Heat the same pot on medium.
- Add the tomato sauce, cream, remaining spices and S&P.
- Cook, stirring often, 2 to 3 min., until beginning to thicken.
- Add the pasta and reserved cooking water; stir well.
Plate your dish
- Divide the pasta and broccoli between your plates.
- Top the pasta with the chicken (slice beforehand if desired). Bon appétit!
*Health Canada recommends cooking poultry to a minimum internal temperature of 74°C.
