Creamy Fresh Pappardelle
with Cherry Tomatoes, Kale & Grana Padano
When it comes to the mammas and pappas of the pasta world, pappardelle deserves a parenting award. These fresh ribbons boil to al dente in no time, offering a pleasant bite and wide shape that easily snuggles up to the sauce. Make it veggie and vibrant with sautéed cherry tomatoes, kale and garlic. And then make it irresistible by adding heavy cream. A garnish of grated Grana Padano proves that pappa knows best!

Preparation
Sauté the vegetables
Bring a medium pot of salted water to a boil. In a large, high-sided pan, heat a drizzle of oil on medium. Add the tomatoes and sauté, gently crushing them, 3 to 5 min., until beginning to soften. Add the kale and garlic. Sauté, 3 to 4 min., until wilted.
Boil the pasta
Meanwhile, add the pasta to the pot of boiling water, separating the strands as you add them; stir gently. Boil, stirring occasionally, 2 to 3 min., until al dente. Reserving 1 cup cooking water, drain and toss with a drizzle of oil to prevent sticking.
Make the sauce
To the pan of vegetables, add the demi-glace, cream, spices and ⅔ of the reserved cooking water; bring to a boil. Reduce the heat to low and simmer, stirring frequently, 3 to 4 min., until slightly thickened.
Combine the pasta & serve
To the pan of sauce, add the pasta and ½ the cheese. Cook, stirring frequently, 1 to 2 min., until combined. If the sauce seems dry, gradually add the remaining cooking water until you achieve your desired consistency. Divide the pasta between your bowls. Garnish with the remaining cheese. Bon appétit!
