Creamy Pesto Orecchiette
with Broccoli, Cherry Tomatoes & Feta
Attention all little ears, listen up! Dinner will be served shortly, and it will be delicious. This pasta pleaser features orecchiette, named for the little ears that the indented shape resembles. It’s superbly suited to a sauce of fresh and preserved components. Cook broccoli and cherry tomatoes for veggie bounce, with cream and garlic (left whole for aroma). Work in basil pesto before serving, and top it off with salty crumbles of feta.

- 450g Orecchiette
- 30ml Vegetable demi-glace
- 120ml Heavy cream

Large high-sided pan

Preparation
Mise en place
Bring a medium pot of salted water to a boil. Halve the tomatoes. Halve the broccoli if large. Using the flat side of your knife, smash the garlic cloves.
Cook the vegetables
In a large, high-sided pan, heat a drizzle of oil on medium. Add the garlic cloves and sauté, 30 sec. to 1 min., until fragrant. Add the broccoli and ¼ cup water. Cook, partially covered, stirring occasionally, 4 to 5 min., until beginning to soften. Add the tomatoes and cook, stirring occasionally, 2 to 3 min., until the water has evaporated and the broccoli is tender; season with S&P.
Boil the pasta
Meanwhile, add the pasta to the pot of boiling water and boil, 9 to 11 min., until al dente. Reserving 1 cup cooking water, drain and toss with a drizzle of oil to prevent sticking.
Make the sauce
To the pan of vegetables, add the demi-glace, cream and reserved cooking water; bring to a boil. Reduce the heat to simmer and cook, stirring frequently, 2 to 3 min., until slightly thickened. Off the heat, add 2 tbsp butter and S&P; stir well. Remove the garlic cloves.
Combine the pasta & serve
To the pan of sauce, add the pasta; stir well. Off the heat, add the pesto; stir well. Divide the pasta between your bowls. Crumble the cheese over top. Bon appétit!
