Since the carnitas are pre-cooked, all you have to do is heat them up. Since the onion and cabbage are pre-cut, all you have to do is add fresh lime juice for a sunny boost. Fifteen minutes later, all you have to do is enjoy.

  • 300g Shredded cabbage
  • 50g Diced onions
  • 30ml Orange juice
  • 60ml Mayonnaise
  • 25g Roasted pepitas (pumpkin seeds)

  • 6 Wheat flour tortillas

Preparation

Pickle the onions

  • Juice the lime.

  • In a small bowl, combine the onions, ½ the lime juice and a pinch of salt.

Warm the pork

  • In a medium pan, heat a drizzle of oil on medium-high.

  • Add the pork and cook, breaking up the meat, 4 to 5 min., until warmed through.

  • Transfer to a bowl.

  • Wipe out and reserve the pan.

Make the slaw

  • Meanwhile, in a medium bowl, combine both types of cabbage, the pepitas, ½ the orange juice, ½ the mayo, ½ the remaining lime juice, a drizzle of oil and S&P.

Warm the tortillas

  • In the reserved pan, heat a drizzle of oil on medium.

  • Working in batches, add the tortillas and toast, 15 to 30 sec. per side, until warmed through and beginning to brown

Make the lime mayo & serve

  • In a second small bowl, combine the remaining mayo, orange juice and lime juice, and S&P.

  • Divide the tortillas between your plates.

  • Spread with the lime mayo.

  • Top with the pork, onions (drain before adding) and a spoonful of the slaw.

  • Garnish with the cheese.

  • Serve the remaining slaw on the side. Bon appétit!
