Fast Ground Beef Tacos
with Butternut Squash, Slaw & Spiced Sour Cream
Andale, andale! When time is tight, it’s tacos to the rescue. Try tasty tortilla packages that need only 10 minutes of cooking time before they’re folded in hand (and munched in mouth). Ground beef sizzles and browns, along with butternut squash, in spices like chili powder, cumin and coriander to create a Mexican mood. Give each warmed base some filling, some carrot-cabbage slaw and a drizzle of spiced sour cream to cover the flavour spectrum.

- 30ml White vinegar
- 30ml Vegetable demi-glace
- 43ml Sour cream
- 6 Wheat flour tortillas

Preparation
Make the filling
Preheat the oven to 450°F. In a large pan, heat a drizzle of oil on medium-high. Add the squash and sauté, 2 to 3 min., until partially cooked. Add the beef and cook, breaking up the meat, 4 to 6 min., until partially cooked. Add the demi-glace, all but a pinch of the spices and 2 tbsp water (double for 4 portions); bring to a boil. Reduce the heat to simmer and cook, stirring occasionally, 2 to 3 min., until the beef* is cooked through and the squash is tender.
Make the slaw
Meanwhile, in a medium bowl, combine the cabbage, vinegar, carrots, 2 tbsp olive oil (double for 4 portions) and S&P.
Warm the tortillas
Stack and tightly wrap the tortillas in aluminum foil. Warm directly on an oven rack, 6 to 8 min., until heated through.
Make the spiced sour cream
Meanwhile, in a small bowl, combine the sour cream, 1 tbsp water (double for 4 portions), the remaining spices and a pinch of salt.
Plate your dish
Divide the tortillas between your plates. Top with the filling and slaw. Drizzle with the spiced sour cream. Bon appétit!
