French Onion Beef Patties
with Sneaky Portobellos
Delicious to the core! By making these patties with ground beef and grated portobello mushrooms, you’re doubling the meaty effect—and giving the veg content a bump too. Serve them with a savoury French onion sauce, over roasted potatoes and Brussels sprouts.

- 1 Onion (or shallot)
- 300g Brussels sprouts
- 900g Potatoes
- 2 Portobello mushrooms
- 60ml Vegetable demi-glace
- 30g Panko
- 9g Zesty Herbs spices (salt, garlic, dried carrots, spice, red bell pepper, sugar, curry powder (mustard), canola oil, onion, black pepper, lemon oil, citric acid)

Preparation

Roast the Brussels sprouts & potatoes
- Preheat the oven to 450°F.
- Halve the Brussels sprouts lengthwise if large.
- Medium-dice the potatoes.
- On a lined sheet pan, toss with a drizzle of oil and S&P.
- Roast, stirring halfway, 20 to 25 min., until browned and tender.

Mise en place
- Meanwhile, grate the mushrooms.
- Halve, peel and thinly slice the onion.

Prepare & cook the patties
- In a large bowl, combine the beef, mushrooms, panko, ½ the spices, 1 egg and S&P.
- Form into 4 patties.
- In a large pan, heat a drizzle of oil on medium-high.
- Add the patties* and cook, 3 to 5 min. per side, until browned and cooked through.
- Transfer to a plate, leaving any browned bits in the pan. Reserve the pan.

Make the sauce
- In the same pan, heat a drizzle of oil on medium-high.
- Add the onion and sauté, scraping up any browned bits, 2 to 3 min., until lightly browned.
- Add the remaining spices, demi-glace, 2 tbsp butter and ¾ cup water. Cook, stirring often, 2 to 4 min., until slightly thickened; season with S&P.

Plate your dish
- Divide the patties, Brussels sprouts and potatoes between your plates.
- Spoon the sauce over the patties. Bon appétit!
*Health Canada recommends cooking ground beef to a minimum internal temperature of 71°C.
